What could be rightly called the "Modern RomanrnPinsa" is a reinterpretation of an old recipe dating back to the time ofrnancient Rome due to modern ingredients and techniques. The original reciperncomes from farmer populations living outside the fortress, which, by grindingrncereals (millet, barley and hell) and with the addition of salt and herbs,rncooked these flat cakes. The term comes from the Latin pinching,rnstretching-swinging. This classic recipe over the centuries has undergonernseveral revisions to this day.
